Description

Acquacotta is a delightful Tuscan vegetable soup that combines fresh ingredients like rainbow chard, tomatoes, and poached eggs. With its rich flavors and comforting nature, this dish is a fantastic option for a quick and healthy dinner that will warm your heart.


Ingredients

Scale
  • 2 cloves garlic
  • 1 white onion
  • 2 celery stalks
  • 1 large carrot
  • 7 oz rainbow chard or greens, (200g)
  • 14 oz canned plum tomatoes, (400g)
  • 4 large eggs
  • 1 pinch chilli flakes
  • 3 and 3/4 cups vegetable stock, (900ml)
  • 4 slices crusty white bread
  • pecorino cheese, for serving
  • Salt and pepper
  • Olive oil


Instructions

  1. Chop the carrot, celery, and onion into medium-sized chunks and place them in a bowl.
  2. Finely chop the garlic and set it aside.
  3. Wash and roughly chop the rainbow chard or greens, then set them aside.
  4. Drain the canned plum tomatoes and prepare the vegetable stock.

Notes

For added richness, drizzle some olive oil over the soup before serving.
You can substitute the chard with any seasonal greens you have on hand.
Serve with crusty white bread for a complete meal.
