  • 2 boneless, skinless chicken breasts
  • kosher salt
  • freshly ground black pepper
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups panko breadcrumbs


Instructions

  • Preheat your air fryer to 350 degrees Fahrenheit.
  • Slice each chicken breast in half width-wise to create four thin cutlets.
  • Cover the chicken with plastic wrap and pound them to about ¼ – ½” thick using a meat mallet.
  • Remove the wrap and season both sides with kosher salt and black pepper.
  • Prepare 3 shallow bowls: fill one with flour, the second with the beaten eggs, and the third with panko breadcrumbs.
  • Dip each chicken piece in the flour, ensuring it's fully coated on both sides.
  • Coat the chicken in the beaten egg next, making sure both sides are covered.
  • Finally, press the chicken into the panko breadcrumbs until well coated, without any exposed surface.
  • Place the coated chicken in a single layer in the air fryer basket and cook for 10 minutes on one side.
  • After 10 minutes, flip the chicken and cook for another 5 minutes or until golden brown and cooked to an internal temperature of 160 degrees Fahrenheit.
  • Repeat until all chicken katsu is cooked and serve.

Notes

Ensure the chicken is pounded evenly for consistent cooking.
You can customize the breading by adding spices to the flour or breadcrumbs for extra flavor.
Serve with tonkatsu sauce or a simple side salad.
