- 1 ½ pounds whole cremini mushrooms
- 1 pound Italian sausage (mild or hot)
- ¼ cup yellow onion (finely diced)
- 4 cloves garlic (minced)
- ¼ teaspoon red pepper flakes (optional)
- 4 ounces cream cheese (softened)
- 1 large egg yolk
- ½ cup Parmesan cheese (finely grated)
- ¼ cup panko bread crumbs
- 2 tablespoons fresh parsley (minced)
- Kosher salt and black pepper (to taste)
Instructions
- Remove stems from cremini mushrooms and finely chop them.
- Cook Italian sausage in a skillet until browned, then add chopped mushroom stems and diced onion. Sauté for 2-3 minutes.
- Add minced garlic and red pepper flakes and sauté for another 30 seconds. Drain excess grease and let cool.
- In a bowl, combine cream cheese and egg yolk until blended, then fold in Parmesan cheese, panko, and parsley. Mix in cooled sausage mixture and season with salt and pepper.
- Stuff each mushroom cap with the sausage filling.
- Air fry at 390°F for 5-7 minutes until tops are golden and crispy.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days.
Reheat in the air fryer at 350°F for 3-5 minutes.
