- 2 medium zucchini , cut into 1/2" dials
- 3/4 cup panko bread crumbs
- 1 tsp old bay
- 1 tsp garlic salt
- 1 large egg, whisked
- 1 spray olive oil
Instructions
- Cut the ends off the zucchini and slice into 1/2" dials. For crispier chips, slice thinner. Preheat the air fryer to 350°F while you prepare the zucchini.
- Place sliced zucchini on paper towels and gently press to remove excess moisture.
- In a bowl, whisk the egg. On a plate, combine the panko and seasonings, mixing well.
- Dip each zucchini slice into the egg, ensuring it's coated, then press into the panko mixture until fully coated. Place them in a single layer in the air fryer, using a trivet if available.
- Once all pieces are arranged without overlapping, spray them lightly with olive oil. Close the air fryer lid and cook at 350°F for 13 minutes, flipping the chips after 10 minutes. Adjust time for desired crispness.
- For smaller slices, reduce the cooking time to 10 minutes total, flipping after 8 minutes.
- Remove the chips from the air fryer, enjoy immediately, and repeat with any remaining batches.
Notes
The thinner the zucchini slices, the crispier the chips will be.
