Description

Armadillo Eggs combine the heat of jalapenos, creamy filling, and crispy bacon for a delightful dish. Perfect for gatherings or a quick snack, this easy recipe will satisfy your cravings for comfort food with minimal prep time.


Ingredients

  • 1 pound ground pork sausage
  • 12 slices bacon
  • 6 jalapenos seeded, cored, and stem removed
  • 1 cup bbq sauce i like sweet baby ray's
  • 4 ounces cream cheese softened
  • ½ cup sharp cheddar cheese shredded
  • 2 teaspoons cornstarch
  • 1 tablespoon bbq rub i used kinder's all purpose seasoning
  • Salt/Pepper To Taste


Instructions

  • Preheat the smoker to 250 degrees F. Cut the tops off the jalapenos, and core and seed them.
  • In amedium bowl, mix the cream cheese, shredded cheddar, cornstarch, salt, pepper, and barbecue rub until well combined.
  • Stuff the prepared jalapenos with the mixture. Then wrap each pepper with ground pork sausage, forming an oval shape. Use a food scale for consistency if desired.
  • Wrap each sausage-covered jalapeno in one or two slices of bacon. Secure with toothpicks if necessary.
  • Smoke the jalapenos for 2 to 2.5 hours or until the internal temperature reaches 160 degrees F.
  • Brush the smoked jalapenos with barbecue sauce and cook at 400 degrees F for an additional 2 to 3 minutes.

Notes

Ensure each jalapeno is well-stuffed to maximize flavor.
Adjust the amount of barbecue sauce according to your taste preference.
Feel free to experiment with different types of sausage for unique flavors.
