Description

This Baked Cod with Lemon is a delightful combination of tender cod fillets, zesty lemon, and aromatic herbs, making it a quick and healthy option for dinner. Perfectly flaky and bursting with flavor, it’s ideal for any weeknight meal or casual gathering with friends.


Ingredients

  • Cod fillets (1 1/2 pounds)
  • Kosher salt (3/4 teaspoon)
  • Fresh ground black pepper
  • Lemon juice (2 tablespoons) & zest of one lemon
  • Olive oil (2 tablespoons)
  • Dried oregano (1 teaspoon)
  • Minced shallot (2 tablespoons)
  • Minced garlic (2 tablespoons/about 4 cloves)
  • Smoked paprika (1/2 teaspoon)
  • Chopped fresh parsley


Instructions

  • Preheat oven to 400°F and pat cod fillets dry.
  • Season cod fillets with salt and pepper.
  • Combine lemon juice, zest, olive oil, oregano, shallot, and garlic in a bowl.
  • Brush a baking dish with olive oil and place cod fillets inside.
  • Brush the remaining lemon mixture over the cod and sprinkle with smoked paprika.
  • Bake for 17 to 20 minutes until fish flakes easily and reaches 130°F.
  • Garnish with parsley and serve immediately.

Notes

Store leftovers in an airtight container for up to 3 days.
Freezing is an option; wrap tightly and use within 3 months.
Reheat in a 350°F oven for 10-15 minutes after thawing.
