- 1/2 lb. halibut, cut into sticks
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/3 tsp paprika
- 1/3 tsp pepper
- 1/3 tsp granulated garlic (or garlic powder)
- 1/3 cup beer (or other carbonated soda)
- Vegetable oil (for frying)
Instructions
- Dry halibut fillet with a paper towel and cut into sticks.
- Whisk together half of the flour with paprika, salt, and garlic in a bowl.
- In another bowl, mix remaining flour with pepper and baking powder, then add beer gradually to form batter.
- Heat about 1/2 inch of vegetable oil to 350°F in a heavy-bottomed pan.
- Dust halibut pieces in seasoned flour, then dip into batter until coated.
- Fry for 3 minutes per side or 6-7 minutes total for deep frying until golden brown.
- Transfer to paper towel-lined plate, season with salt and pepper.
Notes
For crispy fish, ensure it’s well-dried before battering.
Keep batter cold for best results; a cold beer helps with crispiness.
Do not overcrowd the pan when frying; it can lower oil temperature.
