Description

Ingredients

  • 3 cups cooked (1 cup dry) white long grain rice
  • 1 medium sweet onion
  • 1 green bell pepper
  • 6 garlic cloves
  • 2 15-ounce cans black beans (or 3 cups cooked or instant pot black beans)
  • 2 tablespoons salted butter (substitute olive oil for vegan)
  • 1 tablespoon olive oil
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 teaspoons kosher salt
  • 2 tablespoons lime juice (juice of 1 lime)
  • fresh cilantro, for a garnish


Instructions

  • Begin by cooking the rice using your preferred method (How to Cook Rice or Instant Pot White Rice).
  • Mince the sweet onion, chop the green bell pepper into a small dice, and mince the garlic cloves.
  • Drain and rinse the black beans thoroughly.
  • In a large skillet, melt the salted butter and olive oil over medium-high heat.
  • Add the minced onion, diced bell pepper, and minced garlic to the skillet and cook for about 10 minutes until the onions become translucent and slightly browned.
  • Stir in the drained black beans, cumin, oregano, and kosher salt, mixing well. Cook for an additional 3 minutes until warmed and fragrant, then incorporate the rice and heat for another minute.
  • Remove the skillet from heat and stir in the lime juice. Serve adorned with fresh cilantro.

Notes

For a vegan version, replace the salted butter with additional olive oil.
Feel free to add diced tomatoes or corn for extra flavor and texture.
Adjust the lime juice according to your taste preference.
