This Blackberry Baked Oatmeal features irresistible flavors of oats and fresh blackberries, making it a quick and healthy option for breakfast or a cozy snack.

- 2 cups whole rolled oats
- ¼ cup brown sugar, plus more for topping
- 1 teaspoon cinnamon
- ½ teaspoon kosher salt
- 1 cup milk, room temperature
- 1 ripe banana, mashed (~½ cup)
- 6 oz blackberries, fresh or frozen
Instructions
- Preheat the oven to 350°F. Grease an 8- or 9-inch baking dish with cooking spray, then set it aside.
- In a bowl, combine the oats, brown sugar, cinnamon, and salt, whisking until well mixed. In another bowl or large measuring cup, mix the milk and mashed banana together.
- Add the wet mixture to the bowl of oats, stirring well to combine. Gently fold in most of the blackberries, pouring the mixture into the baking dish and scattering the remaining blackberries on top. Sprinkle extra brown sugar on top, if desired.
- Bake for 40-50 minutes, or until the center is set. Allow to cool for 10 minutes before serving.
Notes
This oatmeal can be stored in the fridge for up to 4 days, making it great for meal prep.
Serve with yogurt or a drizzle of honey for added flavor.
Feel free to substitute mixed berries if desired.
