Description

This Blueberry Compote is bursting with flavor and made with simple ingredients. It’s perfect as a topping for pancakes, desserts, or yogurt, making it a versatile addition to your kitchen.


Ingredients

Scale
  • 2 cups blueberries
  • 3 tbsp granulated sugar
  • 1 tbsp lemon juice
  • Lemon Zest, to taste
  • 2 tbsp water, divided
  • 1 tsp cornstarch


Instructions

  1. In a small saucepan over medium heat, combine blueberries, sugar, lemon juice, 1 tablespoon of water, and lemon zest to taste. Stir gently to combine.
  2. Bring the mixture to a simmer and cook for about 10 minutes, stirring occasionally until berries burst and release their juices.
  3. For a thicker compote, mix cornstarch with 1 tablespoon of water in a small bowl and stir into the compote during the last few minutes of cooking. Simmer for another minute.
  4. Turn off the heat and stir in vanilla extract for added flavor.
  5. Let the compote cool for 5–10 minutes before serving, as it will thicken as it rests.

Notes

Feel free to adjust the sweetness by adding more or less sugar based on your taste.
This compote can be stored in the refrigerator for up to two weeks.
Serve warm over pancakes or yogurt, or chill it to use as a dessert topping.
