- 3 pounds small yellow potatoes (or other waxy potatoes like red, new, yukon gold or fingerling potatoes)
- 2 tablespoons butter (or olive oil)
- 2 tablespoons chopped chives
- kosher salt and fresh ground pepper
Instructions
- Bring a large pot of water to boil, adding 1 tablespoon of kosher salt.
- Wash the potatoes; cut them in half if they are small, or dice into bite-sized pieces if larger.
- Once the water is boiling, add the potatoes and boil for 12 to 18 minutes until fork tender.
- Drain the potatoes and transfer to a bowl. Toss gently with butter, chives, fresh ground pepper, and 3/4 teaspoon kosher salt to taste.
Notes
For extra flavor, you can add garlic or parsley along with the chives.
