Description

These Boiled Potatoes are simple yet delicious, featuring waxy yellow potatoes tossed with butter and chives. Perfect for a quick side dish or comfort food, they offer irresistible flavor with minimal prep!


Ingredients

  • 3 pounds small yellow potatoes (or other waxy potatoes like red, new, yukon gold or fingerling potatoes)
  • 2 tablespoons butter (or olive oil)
  • 2 tablespoons chopped chives
  • kosher salt and fresh ground pepper


Instructions

  • Bring a large pot of water to boil, adding 1 tablespoon of kosher salt.
  • Wash the potatoes; cut them in half if they are small, or dice into bite-sized pieces if larger.
  • Once the water is boiling, add the potatoes and boil for 12 to 18 minutes until fork tender.
  • Drain the potatoes and transfer to a bowl. Toss gently with butter, chives, fresh ground pepper, and 3/4 teaspoon kosher salt to taste.

Notes

For extra flavor, you can add garlic or parsley along with the chives.
Use a variety of waxy potatoes for a mix of textures and tastes.
