Description

This bottom round roast showcases unbeatable flavor with minimal effort. Combining tender meat, savory spices, and rich gravy, it’s an ideal choice for a hearty, satisfying meal.


Ingredients

  • 4 pound bottom round roast
  • 1 small onion, sliced
  • 2 cups beef broth
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • 2 cups drippings
  • 1 tbsp worcestershire sauce
  • 2 tsp onion powder
  • 3 tbsp cornstarch
  • 6 tbsp water to thicken
  • 1 pinch salt, to taste


Instructions

  1. Layer sliced onions at the bottom of a 6-8 quart slow cooker.
  2. Mix salt, pepper, garlic powder, and thyme, then season all sides of the roast evenly with the spice mixture.
  3. Position the roast, fat side up, atop the onions in the slow cooker.
  4. Pour the beef broth slowly around the roast.
  5. Cover the slow cooker and cook on high for 6 hours or on low for 10 hours.
  6. To prepare the gravy, carefully take 2 cups of beef drippings from the slow cooker and transfer them to a saucepan over medium-high heat.
  7. Mix in worcestershire sauce and onion powder, then bring the mixture to a boil.
  8. In a separate dish, combine cornstarch and water until smooth, then gradually stir this into the saucepan, boiling until the gravy thickens.
  9. Remove the gravy from heat and serve over sliced roast, garnished with fresh parsley if desired.

Notes

Make sure to season the roast evenly for the best flavor.
For the gravy, whisk the cornstarch thoroughly to avoid lumps.
