Description

These Buckeye Brownies are a delightful fusion of rich chocolate and creamy peanut butter. With simple ingredients and an easy preparation method, they are perfect for any occasion, promising a soft, fudgy treat that will please everyone.

Ingredients

Scale
  • 6 oz semisweet chocolate (1 cup)
  • ½ cup salted butter
  • 2 large eggs
  • ¾ cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • ¾ cup all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • ¼ teaspoon fine sea salt
  • ¾ cup creamy peanut butter
  • ¼ cup salted butter (softened)
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon fine sea salt
  • 1 ½ cups powdered sugar
  • 1-2 tablespoons whole milk (room temperature)
  • ½ cup heavy cream
  • 1 cup semisweet chocolate (6 ounces)

Instructions

  1. Preheat the oven to 350°F (177°C). Prepare a 9×9-inch baking dish by lining it with parchment paper and lightly greasing it.
  2. Melt 6 oz of semisweet chocolate and ½ cup of salted butter together until smooth.
  3. In a mixing bowl, whisk the eggs, granulated sugar, and 2 teaspoons of vanilla extract. Mix in the melted chocolate mixture.
  4. Add the flour, cocoa powder, and ¼ teaspoon of sea salt to the wet ingredients, and stir until well combined.
  5. Pour the brownie batter into the prepared baking dish and spread evenly. Bake for approximately 25-30 minutes.
  6. While the brownies cool, prepare the peanut butter layer. In another bowl, combine ¾ cup of creamy peanut butter, ¼ cup of softened salted butter, ½ teaspoon of vanilla extract, and ¼ teaspoon of sea salt. Gradually mix in the powdered sugar and enough milk to achieve a smooth consistency.
  7. Spread the peanut butter mixture over the cooled brownies.
  8. Melt 1 cup of semisweet chocolate with ½ cup of heavy cream until smooth to create the chocolate ganache.
  9. Pour the ganache over the peanut butter layer and spread evenly.
  10. Refrigerate for 2 hours to set before cutting into squares and serving.

Notes

Ensure the brownies are completely cool before adding the peanut butter layer for best texture.
For a richer chocolate flavor, you can add chocolate chips to the brownie batter.
Adjust the milk in the peanut butter layer for desired spreadability.
