This Cajun Chicken Alfredo is a delightful dish featuring tender chicken, creamy sauce, and fettuccini pasta, making it a perfect choice for a quick and satisfying meal.

- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breast trimmed of fat & cut into bite size chunks
- 3 tsp cajun seasoning
- 6 garlic cloves minced or pressed
- 1 1/2 cups chicken broth
- 1 cup milk
- 8 oz fettuccini pasta broken in half
- 1/3 cup grated parmesan cheese
- salt & pepper to taste
Instructions
- Heat the olive oil in a large heavy-bottomed pot over medium heat.
- Add the chicken pieces and Cajun seasoning, stirring to combine. Cook for 5 minutes, stirring occasionally.
- Add minced garlic and cook for an additional 60 seconds.
- Pour in the milk and chicken broth, scraping any browned bits from the bottom of the pot for extra flavor until mixed well.
- Add the broken fettuccini pasta to the pot, stirring gently to prevent clumping. Cover and bring the mixture to a boil, stirring occasionally.
- Once boiling, reduce the heat to medium-low. Simmer covered for 9-11 minutes, stirring every 2-3 minutes until most of the liquid is absorbed.
- Remove from heat and stir in parmesan cheese until melted and smooth.
- Season with salt and pepper to taste, and serve immediately.
Notes
Feel free to adjust the level of Cajun seasoning according to your taste.
This dish can be served with a side of vegetables or garlic bread for a complete meal.
