- 5 large bananas, overripe, brown
- 1/3 cup vegetable oil, or canola, pumpkin puree is a good substitute
- 3 large eggs
- 1 box cake mix, we used carrot, spice is good too
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a bowl, mash the bananas, keeping them slightly chunky.
- In another bowl, combine the cake mix, vegetable oil (or canola), and eggs.
- Add the mashed bananas and mix gently until just combined, avoiding over-mixing.
- If desired, fold in 1/4 cup of chopped nuts or mini chocolate chips at this stage.
- Spoon the batter into muffin liners, filling them 3/4 of the way full, and bake for 18 minutes or until they spring back when touched in the center. Be careful not to overbake.
- Remove the muffins from the pan carefully using a spoon and place them on a cooling rack to cool properly.
Notes
For a richer flavor, consider using pumpkin puree instead of oil.
These muffins freeze well, making them a great make-ahead snack. Just thaw before enjoying!
