Description

These Carrot Cake Bars are delightfully moist and filled with the sweet flavor of shredded carrots and warm spices. Topped with creamy frosting, they make a quick, satisfying dessert or snack that everyone will enjoy.


Ingredients

  • ¾ cup avocado oil
  • ½ cup granulated sugar
  • ¾ cup light brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup shredded carrots, ~2 medium carrots
  • 16 oz. cream cheese frosting, here is the recipe we used


Instructions

  1. Preheat oven to 350℉ and grease a 9×9-inch cake pan. Set aside.
  2. In a large bowl, mix the avocado oil, granulated sugar, and brown sugar. Add the vanilla extract and eggs, mixing until well combined. Set aside.
  3. In another bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Combine the dry ingredients with the wet mixture. Once incorporated, fold in the shredded carrots.
  5. Pour the batter into the prepared cake pan. Bake for 30-40 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before frosting, about 2-3 hours.
  6. Frost the cooled bars with cream cheese frosting and cut them into 12 pieces.

Notes

Make sure to allow the cake to cool completely before frosting to prevent the frosting from melting.
These bars can be stored in an airtight container for up to 4 days.
For extra flavor, consider adding chopped nuts or raisins to the batter.
