Description

These delightful carrot muffins are packed with flavor and nutrients. Made with honey, Greek yogurt, and fresh grated carrots, they’re a quick and healthy treat for breakfast or snack time. Simple to prepare and satisfying, these muffins are a must-try for homemade goodness.


Ingredients

  • 1/2 cup honey
  • 2 large eggs at room temp
  • 1-1/2 teaspoons vanilla extract
  • 1 cup honey vanilla Greek yogurt at room temp
  • 1/3 cup melted coconut oil at room temp
  • 1-1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1-1/2 teaspoons baking powder
  • 1-3/4 cups flour
  • 2 cups grated carrots peel & grate on large holes
  • 3 tablespoons light brown sugar optional, for topping


Instructions

  1. Preheat the oven to 425°F and grease a muffin tin with cooking spray, avoiding liners.
  2. Melt the coconut oil and allow it to cool to room temperature while you prepare the other ingredients.
  3. In a large bowl, whisk together the honey, eggs, vanilla extract, and Greek yogurt until smooth.
  4. With constant whisking, gradually add the cooled coconut oil until mixed in.
  5. Add the ground cinnamon, ginger, nutmeg, salt, baking soda, and baking powder. Stir until well combined.
  6. Switch to a wooden spoon and add the flour. Stir gently a few times, then incorporate the grated carrots until no dry flour remains. Avoid overmixing.
  7. Spoon the batter evenly into the 12 muffin cups. If desired, sprinkle the tops with light brown sugar.
  8. Bake for 14–15 minutes, or until the tops are golden and a toothpick comes out clean or with a few moist crumbs.
  9. Allow the muffins to cool in the tin for 5–10 minutes before gently transferring them to a cooling rack.

Notes

Ensure all wet ingredients are at room temperature for smooth batter.
Do not overmix the batter to keep the muffins light and fluffy.
