- 6 cups cauliflower florets, cooked
- 3 tablespoons butter
- 1 tablespoon garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups milk
- Salt and pepper, to taste
- 1/2 cup parmesan cheese, grated
- 2 1/2 cups shredded cheddar cheese, divided use
- 8 slices bacon, cooked and crumbled
- 1/4 cup green onions, sliced

Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook cauliflower florets until tender, then drain.
- Melt butter in a saucepan, add minced garlic and sauté until fragrant.
- Add flour to the butter mixture, whisking for 1 minute to create a roux.
- Gradually whisk in milk, stirring until the mixture thickens and bubbles.
- Season with salt and pepper, then stir in parmesan and 2 cups of cheddar until melted.
- Fold in the cooked cauliflower and crumbled bacon until well combined.
- Transfer mixture to the prepared baking dish, top with remaining 1/2 cup cheddar.
- Bake for 25-30 minutes or until cheese is golden and bubbly.
- Garnish with green onions and serve warm.
Notes
Avoid overcooking the cauliflower to maintain its texture.
For a creamier dish, use half-and-half instead of milk.
Bacon can be substituted with plant-based alternatives or omitted entirely.
