Description

This Cauliflower Casserole features creamy textures and rich flavors, combining cheese and bacon for a warm, comforting meal that’s quick to prepare and perfect for gatherings.


Ingredients

  • 6 cups cauliflower florets, cooked
  • 3 tablespoons butter
  • 1 tablespoon garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • Salt and pepper, to taste
  • 1/2 cup parmesan cheese, grated
  • 2 1/2 cups shredded cheddar cheese, divided use
  • 8 slices bacon, cooked and crumbled
  • 1/4 cup green onions, sliced
  • Cooking spray


Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cook cauliflower florets until tender, then drain.
  • Melt butter in a saucepan, add minced garlic and sauté until fragrant.
  • Add flour to the butter mixture, whisking for 1 minute to create a roux.
  • Gradually whisk in milk, stirring until the mixture thickens and bubbles.
  • Season with salt and pepper, then stir in parmesan and 2 cups of cheddar until melted.
  • Fold in the cooked cauliflower and crumbled bacon until well combined.
  • Transfer mixture to the prepared baking dish, top with remaining 1/2 cup cheddar.
  • Bake for 25-30 minutes or until cheese is golden and bubbly.
  • Garnish with green onions and serve warm.

Notes

Avoid overcooking the cauliflower to maintain its texture.
For a creamier dish, use half-and-half instead of milk.
Bacon can be substituted with plant-based alternatives or omitted entirely.
