Description

Cheesy Barbecue Chicken Quesadillas are a quick and delicious meal bursting with flavor from tender chicken, tangy barbecue sauce, and melted cheddar cheese. Perfect for busy weeknights, they bring comfort and joy to any table!


Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 1/2 cup barbecue sauce
  • 4 tablespoons barbecue sauce (additional)
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 4 soft flour tortillas, 8-inch


Instructions

  • Combine chicken and 1/2 cup of barbecue sauce in a bowl; mix well.
  • Spread a tablespoon of barbecue sauce on half of a tortilla.
  • Layer cheese, chicken mixture, onions, and cilantro on the tortilla; top with more cheese.
  • Fold the tortilla in half to enclose filling.
  • Cook in a preheated skillet for 2 minutes on each side until golden brown and cheese is melted.
  • Slice into wedges and serve warm.

Notes

To prevent bursting, avoid overfilling the quesadillas.
Reheat leftovers in a skillet for a crispy texture.
