- 18 graham cracker sheets
- 1 cup whole pecans
- ¼ cup granulated sugar
- ¾ cup salted butter, melted
- ½ teaspoon salt (only if using unsalted butter)
- 16 ounces block cream cheese, softened
- 1 ½ cups powdered sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract
- 2 – 21 ounce cans of cherry pie filling
- 2 cups heavy whipping cream, cold
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons graham crackers (1-2 cracker sheets)
Instructions
- Preheat your oven to 350 degrees F.
- In a food processor, pulse the whole pecans until finely chopped, then set them aside in a bowl.
- In the processor, add the graham cracker sheets and pulse them into crumbs.
- Combine the pecan pieces with the graham cracker crumbs and the granulated sugar in the food processor. If using unsalted butter, mix in ½ teaspoon of salt.
- Add the melted butter and pulse the mixture until it holds together.
- Transfer the crumb mixture to a 9×13 baking dish and press it down firmly to form the crust.
- Bake for 8-10 minutes until the crust is lightly golden and fragrant.
- Let it cool completely for about 45 minutes before proceeding.
Notes
You can substitute the cream cheese with a lighter option for fewer calories.
Chill the dessert for a few hours before serving to let the flavors combine wonderfully.
