Description

  • 48 ounces chicken broth
  • 10.5 ounce can cream of chicken soup
  • 1 1/2-2 pounds chicken breasts or thighs
  • 1-2 teaspoons salt
  • 2 teaspoons flaky poultry seasoning or 1/4 teaspoon ground poultry seasoning
  • 1/2 teaspoon ground black pepper
  • 16 ounce can refrigerated biscuit dough
  • 1/2 cup all-purpose flour for dumpling preparation


Instructions

  1. In a large Dutch oven or pot, combine chicken broth, cream of chicken soup, poultry seasoning, salt, and black pepper. Whisk until smooth. Add chicken and bring to a gentle boil, then reduce to a simmer. Cover and cook for 25–35 minutes until chicken is cooked and tender.
  2. Remove chicken; shred or cut into bite-sized pieces and set aside.
  3. Sprinkle half of the flour on a clean surface. Place biscuit dough on top and cover with remaining flour. Roll each biscuit out thin (1/8–1/4 inch thick) using a rolling pin.
  4. Cut the rolled biscuits into strips, then square or rectangle shapes. Remove excess flour.
  5. Drop dumplings into the pot one at a time, scatter lightly to prevent sticking. Press down to moisten with broth.
  6. Return chicken to the pot without stirring aggressively. Simmer on low for 15–20 minutes. After 15 minutes, gently stir to prevent sticking and continue cooking uncovered for another 5–10 minutes until dumplings are tender.
  7. Adjust seasoning as needed, adding broth or a mixture of water and cornstarch if desired for thickness. Serve hot.

Notes

Feel free to adjust the seasonings to suit your taste for more flavor.
If you want a more substantial broth, add additional chicken broth during cooking.
For a variation, consider adding vegetables like carrots or peas. You can add them at the same time you return the chicken.
