- 8 thin slices ham
- 8 ounces swiss cheese sliced
- 4 boneless skinless chicken breasts about 2 pounds
- 1 cup italian seasoned breadcrumbs
- ½ cup parmesan cheese grated
- 3 eggs
- ¼ cup milk
Instructions
- Pat the chicken dry with paper towels. Cut each chicken breast in half horizontally to create two thin halves.
- Place chicken pieces between plastic wrap and pound them until about ¼ inch thick.
- Top each chicken piece with a slice of ham and cheese. Roll tightly, tucking the sides in, and wrap in plastic wrap.
- Refrigerate the wrapped chicken for at least 30 minutes or up to one day in advance.
- Preheat the oven to 400°F. Spray a baking sheet with non-stick spray or line with parchment paper.
- Remove chicken from the fridge. Combine breadcrumbs and grated parmesan cheese in a shallow dish.
- In another shallow dish, whisk together eggs and milk.
- Dip the chicken bundles in the egg mixture, then coat with the breadcrumb mixture, pressing lightly to adhere. Place on the prepared baking sheet.
- Bake on the center rack for about 30 minutes, or until the internal temperature reaches 165°F.
- Remove from the oven and serve.
Notes
The chicken can be prepared a day ahead and refrigerated for convenient baking later.
