Description

Ingredients

  • 2 pounds chicken tenders
  • 1 tablespoon curry powder
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 teaspoon chili paste
  • 1/2 teaspoon kosher salt
  • 1/2 cup creamy natural peanut butter
  • 1/4-1/2 cup low-sodium chicken broth
  • 2 tablespoons soy sauce
  • 1 ½ tablespoons honey
  • 1 tablespoon lime juice
  • 1 medium garlic clove minced
  • 1 teaspoon curry powder
  • 2 teaspoons chili paste (or more to taste)
  • 1 tablespoon rice vinegar
  • chopped peanuts
  • sliced scallions
  • roughly chopped cilantro
  • lime wedges


Instructions

  1. Soak wooden skewers in water for at least 30 minutes; skip if using metal skewers.
  2. Trim the white tendon and any membrane from each chicken tender using kitchen shears.
  3. In a mixing bowl, combine chicken tenders with curry powder, lime juice, honey, chili paste, and salt until coated. Cover and refrigerate for about 1 hour.
  4. Prepare the peanut sauce by blending peanut butter, ¼ cup chicken broth, soy sauce, honey, lime juice, garlic, curry powder, chili paste, and rice vinegar until smooth. Adjust consistency with more broth as needed.
  5. Thread marinated chicken onto soaked skewers, securing each tender securely.
  6. Preheat the grill to medium heat (350-400°F) and grill skewers for about 4-5 minutes per side until the internal temperature reaches 165°F with char marks.
  7. Transfer skewers to a plate and garnish with chopped peanuts, cilantro, and scallions. Serve with peanut sauce.

Notes

If using metal skewers, there’s no need to soak them in water.
Customize the spice level of the peanut sauce by adjusting the amount of chili paste.
Pair skewers with fresh lime wedges for an extra burst of flavor.
