- ¾ cup chipotle peppers in adobo sauce
- 4 cloves garlic peeled and coarsely chopped
- 2 fresh limes zested and juiced
- ½ cup water
- ¼ cup vegetable oil
- ¼ cup orange juice
- 3 tablespoons honey
- 2 tablespoons apple cider vinegar
- 1 tablespoon worcestershire sauce
- 2 teaspoons smoked paprika
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon coarse kosher salt
- ½ teaspoon ground black pepper
- 1.25 pounds boneless skinless chicken thighs , about 5 medium filets
- vegetable oil for cooking
Instructions
- Combine chipotle peppers, garlic, lime zest and juice, water, vegetable oil, orange juice, honey, apple cider vinegar, Worcestershire sauce, smoked paprika, ground cumin, dried oregano, kosher salt, and black pepper in a large food processor. Pulse until emulsified.
- Place the chicken thighs in a shallow dish and pierce them with a fork. Pour marinade over chicken, cover, and chill for 4-6 hours.
- Preheat the oven to 350°F if using stovetop instructions. Remove chicken from marinade and discard excess liquid.
- Heat vegetable oil in a grill pan or cast iron pan over medium-high heat. Sear chicken on each side for 4-5 minutes until browned. Transfer pan to oven and cook for 10-12 minutes until the internal temperature reaches 165°F.
- Allow chicken to rest for 5 minutes before slicing.
Notes
Marinating the chicken for longer enhances the flavor.
This marinade works well with various proteins including beef and pork.
Adjust the spice level by varying the amount of chipotle peppers used.
