- 1/2 cups (115g) unsalted butter, softened
- 1/2 cup (100g) light brown sugar
- 1/4 cup (67g) granulated sugar
- 1 large egg + 1 egg yolk, room temp
- 1 tbsp vanilla bean paste
- 1 1/2 (180g) cups all purpose flour, spooned and leveled
- 1 tsp corn starch
- 1 tsp espresso powder, optional
- 1/2 tsp baking soda
- 1/2 tsp flakey sea salt
- 1 cup mini semi sweet chocolate + more for topping
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cornstarch, espresso powder, baking soda, and salt; set aside.
- In a separate bowl, mix the softened butter with the brown sugar and granulated sugar until smooth.
- Add the egg, egg yolk, and vanilla. Whisk for 1–2 minutes until the mixture becomes thick and paste-like.
- Gradually fold in the dry ingredients until just combined, being careful not to overmix.
- Fold in the mini chocolate chips until evenly distributed throughout the dough.
- Transfer the dough to the prepared baking sheet and press it into an even rectangle about 1/2 inch thick.
- Freeze for 20–30 minutes until firm.
- Once chilled, cut the dough into long fry-shaped strips with a sharp knife or bench scraper.
- Separate the pieces slightly to avoid touching and freeze again for another 30 minutes.
- Place no more than 4 cookie fries per baking sheet, spaced out evenly.
- Bake at 350°F for about 13 minutes, until the edges are lightly golden and the centers are set.
- Let them cool on the baking sheet, then allow them to cool completely before serving.
Notes
For a richer flavor, add the optional espresso powder.
Make sure to space the fries on the baking sheet to prevent them from merging while baking.
These cookie fries can be stored in an airtight container for up to a week.
