  • 1 cup light brown sugar, packed
  • 1/2 cup white granulated sugar
  • 1 tsp pure vanilla extract
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature
  • 1 cup semi-sweet chocolate chips, extra to top the cookies
  • 3/4 cup frozen raspberries


Instructions

  1. Sift the flour, baking powder, baking soda, and salt together in a medium bowl. Set aside, and let the frozen raspberries lightly thaw.
  2. In a large bowl, whisk together the melted butter, brown sugar, white sugar, vanilla extract, egg, and egg yolk until smooth.
  3. Crumble the thawed raspberries into small pieces amounting to 3/4 cup. Add them to the mixture along with the dry ingredients and mix using a rubber spatula until just combined.
  4. Gently fold in the chocolate chips and any remaining raspberry crumbles.
  5. Preheat your oven to 350℉ (175℃) and line two cookie sheets with parchment paper. Allow the cookie dough to rest for 10 minutes for better spreading.
  6. Use a large cookie scoop to portion out the cookie dough, placing 6 balls on each cookie sheet. Top each ball with 5-7 extra chocolate chips.
  7. Bake in the preheated oven for 14-16 minutes or until the edges are lightly golden. Remove from the oven and let cookies sit on the pans for 10 minutes before transferring to a cooling rack.

Ensure the butter is melted and cooled slightly before mixing with the sugars to achieve the best texture.
