  • 2/3 cup packed brown sugar
  • 5 tablespoons melted unsalted butter
  • 1 tablespoon ground cinnamon
  • 4 tablespoons unsalted butter
  • 2 ounces cream cheese
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract


Instructions

  • Preheat the oven to 200°F and prepare a large sheet pan to keep pancakes warm.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and optional nutmeg or cinnamon.
  • Add beaten eggs, buttermilk, and vanilla extract to the bowl, and whisk until just combined. Some lumps are fine; avoid overmixing. Let the batter rest for 10 minutes.
  • For the cinnamon swirl, mix brown sugar, melted butter, and ground cinnamon in a small bowl. Transfer this to a quart-size zip-top bag and set aside.
  • Preheat a skillet or griddle over medium-high heat, greasing it with cooking spray or melted butter.
  • Spoon out 1/3 cup of batter for each pancake. When bubbles form, snip the corner of the cinnamon filling bag and swirl it on top of the pancake.
  • Cook pancakes for 2-3 minutes until golden brown, then flip and cook for an additional 2 1/2 minutes.
  • Prepare the cream cheese glaze by melting butter and cream cheese in a microwave-safe bowl, stirring until smooth. Mix in powdered sugar and vanilla extract.
  • Keep pancakes warm in the oven, and repeat cooking process for remaining batter.
  • Serve a stack of pancakes topped with the cream cheese glaze.
