Instructions
- Prepare the sourdough as per your usual method, such as the Sourdough Bread Recipe for beginners.
- Shape the dough into a rectangle, keeping it about one inch thick. Sprinkle ground cinnamon and sugar on top, avoiding the edges.
- Fold the dough in thirds, adding more cinnamon and sugar as you fold. Ensure the last layer is on top before rolling it into a ball, pinching the sides to seal.
- Form tension in the dough ball by pushing it away and pulling it towards you in a candy cane motion. Repeat this until the top is taut.
- Place the dough ball, smooth side down, in a banneton basket. Dust lightly with flour and cover it with plastic wrap. Refrigerate overnight to enhance the flavor.
- Preheat the oven to 450°F with a dutch oven inside. A sheet pan can be placed below to prevent burning the bottom of the bread.
- Transfer the dough onto parchment paper or a silicone sling, score it with a bread lame to allow proper expansion during baking. Bake for 35 minutes with the lid on, then remove the lid and bake for an additional 5 minutes. Cool completely before slicing.
Notes
Ensure the dough maintains a thickness of about an inch during the shaping process.
Regular granulated sugar works best in this recipe compared to brown sugar.
