Ingredients

  • Turkey Neck and Giblets
  • Carrots (2, coarsely chopped)
  • Celery (2 ribs, coarsely chopped)
  • Onion (1, quartered)
  • Garlic (2 cloves, whole)
  • Fresh Rosemary (2 sprigs)
  • Fresh Thyme (2 sprigs)
  • Fresh Sage Leaves (2-3, whole)
  • Water (6 cups)
  • Fat from Turkey Drippings (4 tablespoons)
  • All-Purpose Flour (6 tablespoons)
  • Juice from Turkey Drippings
  • Homemade Turkey Stock (or 4 cups store-bought)
  • Salt and Pepper (to taste)

Instructions

  • Make the Turkey Stock by simmering turkey neck, giblets, vegetables, and herbs in water for 2 hours.
  • Strain the stock into a bowl and discard the solids, keeping the fragrant liquid.
  • Prepare the gravy base by collecting turkey drippings and separating the fat.
  • Make the roux by cooking flour with the fat until golden.
  • Add turkey drippings and stock gradually, whisking until smooth.
  • Bring the mixture to a simmer, adjusting thickness and seasoning as desired.
  • Strain for a smooth finish before serving.

Notes

For a thicker gravy, allow it to simmer longer after adding all liquid.
Make sure to whisk continuously to avoid lumps when adding liquids.
Store leftover gravy in an airtight container; refrigerate for up to 4 days.
