Instructions
- In a large skillet, melt the butter over medium-high heat. Add the onions and garlic, sautéing until tender.
- Add the vegetable oil, then the diced potatoes along with the seasonings. Cook over medium-high heat until the potatoes are fork tender, about 8–10 minutes, stirring frequently to prevent burning.
- Once the potatoes are golden brown and slightly crispy, add the diced corned beef. Adjust the heat to medium if necessary.
- Press the mixture down with a spatula, turning occasionally, and cook until the corned beef becomes crispy around the edges, about 5–8 minutes. Serve immediately or topped with eggs.
Notes
For extra flavor, consider adding some diced bell peppers or Worcestershire sauce.
