- 5 lbs beef brisket
- 1 tablespoon whole allspice berries
- 1 tablespoon whole mustard seeds
- 1 tablespoon coriander seeds
- 1/2 tablespoon red pepper flakes
- 1 tablespoon whole black peppercorns
- 1 tablespoon whole red peppercorns
- 1 teaspoon whole cloves
- 2 teaspoons ground ginger
- 8 whole cardamom pods
- 6 large bay leaves crumbled
- 1 stick cinnamon
- 1 gallon water
- 1 teaspoon pink curing salt
- 1 cup kosher salt not iodized salt
- 1/2 cup brown sugar light or dark both work
- 4 tablespoons pickling spices from above – save the rest
Instructions
- To save time, consider using store-bought pickling spices or make your own using the listed ingredients.
- In a small frying pan over medium-low heat, combine the allspice berries, mustard seeds, coriander seeds, red pepper flakes, black peppercorns, red peppercorns, cloves, and cardamom pods. Toast the spices until they become fragrant, which takes about one to two minutes, stirring occasionally to prevent burning.
- Remove the mixture from heat and transfer to a small bowl. Crush the toasted spices with a mortar and pestle, then add the crumbled bay leaves and ground ginger, stirring to combine.
Notes
For a larger brisket of 10-12 lbs, increase the pink curing salt to 2 tablespoons.
Make sure to use non-iodized kosher salt for best results.
