- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 3 tablespoons powdered sugar
- 2 ¼ teaspoons baking powder
- 1 tablespoon butter, softened
- ¼ cup brown sugar
- 1 ½ teaspoons ground cinnamon
- 1 teaspoon all-purpose flour
- 1 egg white, beaten
- 1 tablespoon coarse sugar
- 1 tablespoon powdered sugar
Instructions
- Preheat the oven to 350˚F.
- In a mini food processor, blend the cottage cheese and vanilla extract until smooth and then let it rest for 10 minutes.
- In a bowl, mix the flour, powdered sugar, and baking powder. Incorporate the blended cottage cheese until a rough dough forms.
- Transfer the dough to a floured surface, shape it into a ball, and divide it into two pieces.
- Prepare the cinnamon sugar filling by mixing the brown sugar, ground cinnamon, and 1 teaspoon of all-purpose flour in a small bowl.
- Roll one piece of dough into a 10-inch circle, spread 1/2 tablespoon of softened butter over it, and sprinkle with half of the cinnamon sugar mixture.
- Press the topping down gently, cut the circle into eight wedges, and roll each wedge from the wide end.
- Pinch the tip of each crescent to secure it and place on a parchment-lined baking sheet with the tip facing down.
- Repeat the process with the other dough piece.
- Brush the rolls with the beaten egg white and sprinkle with coarse sugar.
- Bake for 15-18 minutes, then dust with powdered sugar before serving.
Notes
For a richer flavor, consider using full-fat cottage cheese.
