- 1 tablespoon extra virgin olive oil
- 1 large onion, chopped into small pieces
- 1 apple, diced
- 2 cloves garlic, minced
- 2 tablespoons rosemary, chopped
- 1 loaf cranberry walnut bread, cut into 1-inch cubes
- 1 egg
- 1/3 cup heavy cream
- 1/2 cup chicken stock
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon freshly ground black pepper
- Olive oil spray or cooking spray
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Sauté chopped onions in olive oil with salt and pepper until translucent, then add diced apples and cook for a few minutes.
- Stir in minced garlic and rosemary, then remove from heat.
- In a bowl, combine cubed bread with the sautéed mixture, mixing gently.
- In another bowl, whisk together the egg, heavy cream, chicken stock, salt, and pepper, then mix into the bread mixture.
- Transfer the stuffing to the baking dish, spread evenly, and spray with olive oil on top.
- Bake for about 30 minutes until golden brown and set in the center.
Notes
You can substitute the olive oil with melted butter for richer flavor.
For extra crunch, toss in some additional walnuts before baking.
Stuffing can be prepared a day before and baked just before serving.
