This Creamy Lobster Ravioli Sauce is a delightful blend of flavors featuring buttery sauce, fresh sage, and rich cream. Ingredients

  • 8 ounces lobster ravioli
  • 1 shallot
  • 1 tablespoon butter
  • 1 ½ tablespoons chopped fresh sage plus 6-8 whole sage leaves
  • 1 tablespoon olive oil
  • 2 tablespoons white wine
  • ½ cup heavy cream
  • ½ cup pasta water from cooking ravioli
  • 1-2 teaspoons lemon juice
  • 1-2 tablespoons parmesan cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon white pepper


Instructions

  1. Peel and finely chop shallot.
  2. Fill a large saucepan with water and heat to boiling. Add lobster ravioli and cook according to the package directions. Reserve ½ cup pasta cooking water before draining.
  3. Meanwhile, melt butter over medium heat in a 10-inch skillet.
  4. Add in whole sage leaves and cook for 2 minutes, until crispy but not burned. Remove sage leaves from skillet and place onto a paper towel until needed for garnish.
  5. Add olive oil to skillet (no need to wipe out pan).
  6. Add in chopped shallots and chopped fresh sage.
  7. Sauté over medium heat until lightly browned, about 2 minutes.
  8. Pour in the white wine and stir to deglaze the pan. Cook about a minute, until much of the white wine has evaporated.
  9. Pour in heavy cream and reserved pasta water.
  10. Stir in 1 teaspoon lemon juice, 1 tablespoon parmesan cheese, kosher salt, and white pepper.
  11. Turn up the heat to medium-high, until sauce comes to a simmer.
  12. Turn heat back to medium and continue to simmer for 5 minutes, until sauce has thickened slightly.
  13. Taste and add additional lemon juice, parmesan cheese, or salt, as needed.
  14. Divide ravioli between two plates, and pour the sauce over top. Alternatively, you can add the ravioli to the pan with the sauce and toss, before plating.
  15. Garnish with the crisped sage leaves and extra parmesan cheese.

Notes

You can substitute the lobster ravioli with any other type for a different flavor.
Adjust the seasoning of the sauce to suit your taste preferences.
For a thicker sauce, simmer a little longer.
