- 1 pint heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon pure vanilla extract
Instructions
- Melt the butter and let it cool for a few minutes before adding to the batter.
- In a blender, combine flour, milk, water, eggs, salt, sugar, and vanilla extract and blend until smooth.
- Allow the batter to rest in the fridge for 30 minutes to 2 hours for better results.
- Heat a skillet over medium heat and lightly coat with cooking spray or melted butter.
- Pour 1/4 cup of batter into the skillet and quickly swirl it to coat the bottom.
- Cook for 1 to 2 minutes, then flip and cook for another 90 seconds.
- Repeat with the remaining batter, stacking cooked crepes as you finish.
- To make the whipped cream, beat heavy whipping cream until stiff peaks form, then mix in powdered sugar and vanilla extract.
- Fill crepes with desired toppings and enjoy!
Notes
Allowing the batter to rest improves texture, but it’s not strictly necessary.
For a savory version, omit sugar and vanilla extract in the batter.
Use a non-stick skillet for easier flipping.
