Ingredients

  • 1 cup all-purpose flour
  • 1 tsp coarse sea salt
  • ½ tsp coarse black pepper
  • ½ tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 2 eggs
  • 4 to 6 boneless pork chops
  • 1 cup vegetable oil


Instructions

  1. In a shallow bowl, whisk together the flour, salt, pepper, paprika, garlic powder, and onion powder.
  2. Beat the eggs in a separate shallow bowl.
  3. Place pork chops between two sheets of plastic wrap and pound them to about ½ to ¾ inch thick with a meat mallet.
  4. Heat oil in a cast iron skillet until it reaches 375°F, about ¾ inch deep over medium-high heat.
  5. Dip each pork chop in the flour mixture, coating both sides, then dunk each side into the beaten eggs, and back into the flour mixture.
  6. Carefully lower each pork chop into the hot oil, keeping the temperature between 350°F and 375°F, and fry for about 3 minutes on the first side.
  7. Flip the pork chop and cook for an additional 2 minutes or until the internal temperature reaches 145°F.
  8. Transfer the cooked pork chops to a paper towel-lined plate and let them rest for 3 minutes.
  9. Repeat the dredging and cooking process with the remaining pork chops, avoiding overcrowding the pan.
  10. Serve immediately.

Notes

For extra flavor, let the seasoned flour sit for 10-15 minutes before using.
Ensure the oil’s temperature remains consistent for the crispiest results.
These chops pair wonderfully with sides like mashed potatoes or coleslaw.
