- 4 to 6 boneless pork chops

Instructions
- In a shallow bowl, whisk together the flour, salt, pepper, paprika, garlic powder, and onion powder.
- Beat the eggs in a separate shallow bowl.
- Place pork chops between two sheets of plastic wrap and pound them to about ½ to ¾ inch thick with a meat mallet.
- Heat oil in a cast iron skillet until it reaches 375°F, about ¾ inch deep over medium-high heat.
- Dip each pork chop in the flour mixture, coating both sides, then dunk each side into the beaten eggs, and back into the flour mixture.
- Carefully lower each pork chop into the hot oil, keeping the temperature between 350°F and 375°F, and fry for about 3 minutes on the first side.
- Flip the pork chop and cook for an additional 2 minutes or until the internal temperature reaches 145°F.
- Transfer the cooked pork chops to a paper towel-lined plate and let them rest for 3 minutes.
- Repeat the dredging and cooking process with the remaining pork chops, avoiding overcrowding the pan.
- Serve immediately.

For extra flavor, let the seasoned flour sit for 10-15 minutes before using.
