- 2 pounds russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 2 tablespoons all-natural truffle oil or to taste
- parmesan or pecorino, freshly grated (omit for vegan)
- chunky sea salt, for garnish
- chopped chives, for garnish
Instructions
- Preheat your oven to 450°F.
- Wash the potatoes, leaving the skins on, and slice them into fries. Aim for even thickness as much as possible.
- In a bowl, combine the fries with olive oil and kosher salt, mixing well to coat evenly.
- Line two baking sheets with parchment paper and arrange the fries in a single layer.
- Bake in the oven for 15 minutes, then flip the fries and reduce the temperature to 400°F.
- Reverse the baking sheets in the oven and continue baking for another 10 minutes until golden brown and crispy, adjusting time based on thickness.
- Once done, drizzle with truffle oil, add chunky sea salt, and sprinkle with parmesan cheese and chives before serving.
