- 1/2 yellow onion, finely diced
- 8 cloves garlic, minced
- 14 oz artichoke hearts, drained and chopped
- 12 oz frozen spinach
- 8 oz block cream cheese
- 2/3 cup sour cream
- 1/4 cup mayo
- 2 cups parmesan cheese, freshly grated
- 1 1/2 cups shredded mozzarella cheese
Instructions
- In a slow cooker, combine all ingredients except the cream cheese, stirring well.
- Cut the cream cheese into cubes and layer them on top of the mixture.
- Cook on high for 1.5 hours, then stir to incorporate the cream cheese.
- Continue cooking for an additional 15-30 minutes until the mixture is hot and bubbly.
- Add salt to taste, approximately 3/4 teaspoon.
- Serve hot with tortilla chips, crackers, or baguette slices.
