Description

Ingredients

  • 1/2 yellow onion, finely diced
  • 8 cloves garlic, minced
  • 14 oz artichoke hearts, drained and chopped
  • 12 oz frozen spinach
  • 8 oz block cream cheese
  • 2/3 cup sour cream
  • 1/4 cup mayo
  • 2 cups parmesan cheese, freshly grated
  • 1 1/2 cups shredded mozzarella cheese


Instructions

  1. In a slow cooker, combine all ingredients except the cream cheese, stirring well.
  2. Cut the cream cheese into cubes and layer them on top of the mixture.
  3. Cook on high for 1.5 hours, then stir to incorporate the cream cheese.
  4. Continue cooking for an additional 15-30 minutes until the mixture is hot and bubbly.
  5. Add salt to taste, approximately 3/4 teaspoon.
  6. Serve hot with tortilla chips, crackers, or baguette slices.

Notes

Feel free to adjust the salt according to your preference.
For a lighter version, substitute with low-fat cream cheese and sour cream.
This dip can be kept warm in a crock pot for serving at parties.
