- 10 oz. box frozen chopped spinach (thawed and squeezed)
- 8 oz. mushrooms
- 1 garlic clove (minced)
- ⅛ tsp salt
- 1 tbsp cooking oil (divided, any neutral-flavored oil)
- 2 oz. feta cheese
- 4 large eggs
- ¼ cup parmesan cheese (grated)
- ¼ tsp black pepper (freshly cracked)
- 1 cup milk
- ½ cup mozzarella cheese (shredded)
Instructions
- Preheat the oven to 350ºF. Thaw and squeeze as much moisture out of the spinach as possible.
- Rinse the mushrooms to remove dirt, then slice them thinly. Mince the garlic.
- In a skillet, add the mushrooms, garlic, salt, and ½ tbsp of cooking oil. Sauté over medium heat until the mushrooms release their moisture and it evaporates completely.
- Brush the remaining ½ tbsp of cooking oil inside a 9-inch pie plate. Layer the mushrooms, spinach, and crumbled feta in the pie plate.
- In a large bowl, whisk the eggs, Parmesan, pepper, and milk together.
- Pour the egg mixture over the layered vegetables and cheese in the pie plate. Top with the shredded mozzarella.
- Bake in the preheated oven for about 50 minutes, until golden brown on top and the internal temperature reaches 160ºF. Slice and enjoy!
Notes
Make sure to squeeze out as much moisture from the spinach as possible to avoid a watery quiche.
Feel free to substitute with your choice of cheese for a different flavor profile.
