Instructions
- Prepare the marinade by mixing yogurt, tomato paste, lemon zest, lemon juice, garlic, and spices in a large bowl.
- Season the chicken by patting it dry and sprinkling with kosher salt and black pepper on both sides.
- Marinate the chicken by adding it to the bowl, ensuring each piece is well coated. Cover and refrigerate for 3 hours or up to overnight for best results, or let it sit at room temperature for 30 minutes.
- Divide the chicken thighs into two groups and thread them onto metal skewers, placing them snugly together.
- For grilling, preheat the grill to 400°F (medium-high heat) and cook kebabs for about 20 to 30 minutes, turning halfway until done.
- For oven cooking, preheat the oven to 400°F, place kebabs in a large pan, and roast for 50 minutes to 1 hour, turning halfway.
- Let the chicken rest for 5 to 10 minutes after cooking.
- Slice the chicken off the skewers using a sharp knife.
- Serve in pita wraps with your choice of sauce and vegetables, or on a plate alongside rice and salad.
Notes
Marinating the chicken for a longer time results in better flavor.
When cooking in the oven, ensure the skewers are allowed some space from the pan bottom for even cooking.
