This Double Chocolate Zucchini Bread features a rich combination of cocoa and chocolate chips, perfectly blended with moist zucchini. - 1 1/2 cups all purpose flour
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup shredded zucchini
- 1 1/4 cups chocolate chips divided
Instructions
- Preheat the oven to 350°F (180°C). Grease an 8 1/2 x 4 1/2 inch baking tin and line it with parchment paper. Set aside.
- In a large mixing bowl, whisk together the all purpose flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.
- In another large bowl, whisk the milk, oil, eggs, and vanilla extract until well blended.
- Combine the wet ingredients with the dry ingredients, mixing with a silicone spatula until just combined. Fold in the shredded zucchini and 1 cup of chocolate chips.
- Transfer the batter into the prepared baking tin and sprinkle the remaining 1/4 cup of chocolate chips on top.
- Bake for 45 minutes, or until cooked through. Let cool in the baking tin for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Make sure to measure the shredded zucchini after it has been packed.
For added flavor, consider using dark chocolate chips.
