Description

Easy Chicken Piccata combines tender chicken, vibrant lemon, and capers for an irresistible meal. Perfect for a quick dinner that delights the taste buds!


Ingredients

  • 2 boneless skinless chicken breasts or 4 cutlets (about 1 1/2 pounds, organic if possible)
  • 1 teaspoon kosher salt
  • freshly ground black pepper
  • ½ teaspoon garlic powder
  • 3/4 cup all-purpose flour (or gluten-free 1-for-1 flour)
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/4 cup capers, drained
  • 2 tablespoons fresh lemon juice, plus zest of 1/2 lemon
  • 1/2 cup dry white wine or chicken stock
  • 2 tablespoons salted butter
  • 1 tablespoon heavy cream, optional
  • 1/4 cup finely chopped fresh parsley


Instructions

  • Pat the chicken dry with a paper towel. If using breasts, slice in half horizontally. Pound the chicken to an even 1/4” thickness between plastic wrap.
  • Season the chicken with kosher salt, black pepper, and garlic powder.
  • Spread flour on a shallow plate and dredge the chicken breasts, shaking off excess flour.
  • Heat olive oil in a large skillet over medium heat. Cook the chicken for 3 to 5 minutes per side until browned and cooked through at 165°F.
  • In the same skillet, lower the heat and add minced garlic and capers. Cook for about 1 minute, until fragrant.
  • Stir in lemon zest, lemon juice, and white wine (or chicken stock). Bring to a boil, scraping the pan for flavor.
  • Reduce to a simmer, add butter (and optional heavy cream), and cook until the sauce thickens slightly. Return chicken and simmer for 2 minutes.
  • Transfer chicken to a serving plate and drizzle with sauce and garnish with parsley.

Notes

Using organic chicken is recommended for the best flavor and quality.
For a gluten-free version, substitute regular flour with a gluten-free option.
Adjust the amount of lemon juice to your taste for more or less tang.
