Description

These Easy Coconut Date Nut Balls boast a delightful blend of sweetness and crunch. Perfect for a quick snack or a healthy treat, these simple bites are packed with flavor and wholesome ingredients.


Ingredients

  • 1 cup shredded coconut, unsweetened
  • ½ cup dates, pitted
  • ½ cup pecans
  • ½ cup almonds
  • 2 tablespoons coconut oil, melted
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • pinch of sea salt


Instructions

  1. Add the shredded coconut, dates, pecans, almonds, coconut oil, vanilla extract, cinnamon, and salt to a food processor.
  2. Pulse until the mixture is finely chopped.
  3. Continue to process until the mixture forms a sticky dough that holds together when pressed.
  4. Scoop 1 tablespoon of the dough and roll into bite-sized balls. Repeat with the rest of the mixture.
  5. Store in an airtight container in the refrigerator until ready to eat.

Notes

For a different flavor, try using other nuts like walnuts or cashews.
