Description
This French Onion Soup features rich, caramelized onions, savory beef broth, and gooey melted gruyere cheese. Perfect for a quick dinner or a comforting meal!

- ¼ cup unsalted butter
- 2 pounds yellow onions sliced ¼” thick
- ½ teaspoon kosher salt
- ½ cup dry white wine
- 2 tablespoons all-purpose flour
- 48 ounces beef bone broth
- 8 sprigs fresh thyme
- 1 bay leaf
- 4 ounces french bread sliced
- 8 ounces gruyere cheese shredded
- chopped parsley for garnish
Instructions
- Melt the butter in a 10” pot over medium-high heat, add onions and salt, and stir to coat.
- Cook the onions, stirring occasionally until golden and soft, about 1 to 1.5 hours, adjusting heat if needed.
- In the last 20-30 minutes, adjust heat to medium and stir frequently for even caramelization until deeply golden.
- Add the wine, stir, and scrape the pan to incorporate browned bits. Sprinkle flour and stir into the onions.
- Add bone broth, ensuring no lumps, then add bay leaf and thyme. Simmer for 15-20 minutes, stirring occasionally.
- Toast the bread slices while the soup simmers.
- Preheat the oven broiler. Remove bay leaf and thyme from the soup and discard.
- Ladle soup into oven-safe bowls placed on a sheet pan, top with toasted bread, and sprinkle cheese on top.
- Broil in the oven until the cheese is melted, about a few minutes, then serve.
Notes
Use a good quality beef bone broth for best flavor.
Adjust the amount of cheese according to your preference for a cheesier soup.
Fresh thyme can be substituted with dried thyme if needed.
