Ingredients
Scale
- 2 pounds Yukon gold or russet potatoes
- 1/4 cup unsalted butter, divided
- 4 cloves garlic, minced
- 3/4 cup heavy cream, warmed
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon fresh chives
- 1 teaspoon fresh thyme or rosemary
- 1 teaspoon fresh sage
Instructions
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes and let excess moisture evaporate.
- Melt half the butter in a saucepan with minced garlic until fragrant.
- Stir in warmed heavy cream, then add to mashed potatoes.
- Fold in salt, pepper, chives, thyme, and sage; mix well.
- Transfer to a serving dish and dot with remaining butter before serving.
Notes
For richer flavor, consider roasting garlic before adding it to the potatoes.
Use half-and-half as a lighter alternative to heavy cream.
If mashing ahead of time, keep the butter-garlic mixture separate until serving.
