Description

Ingredients

  • 2 pounds Yukon gold or russet potatoes
  • 1/4 cup unsalted butter, divided
  • 4 cloves garlic, minced
  • 3/4 cup heavy cream, warmed
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon fresh chives
  • 1 teaspoon fresh thyme or rosemary
  • 1 teaspoon fresh sage


Instructions

  • Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  • Drain the potatoes and let excess moisture evaporate.
  • Melt half the butter in a saucepan with minced garlic until fragrant.
  • Stir in warmed heavy cream, then add to mashed potatoes.
  • Fold in salt, pepper, chives, thyme, and sage; mix well.
  • Transfer to a serving dish and dot with remaining butter before serving.

Notes

For richer flavor, consider roasting garlic before adding it to the potatoes.
