Description

This Gluten Free Low Carb Apple Dump Cake combines the warm flavors of apples and cinnamon for a delicious and easy dessert. Perfect for any gathering, it’s healthy and satisfies your sweet cravings without the carbs!


Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup sunflower seed meal (or almond flour)
  • 1/2 cup Monk fruit Allulose brown sweetener
  • 1 teaspoon cinnamon
  • 1 teaspoon apple pie spice
  • 1.5 teaspoons baking powder
  • 6 eggs (beaten)
  • 5.3 ounces plain Greek yogurt
  • 6 tablespoons butter (melted, cooled)
  • 1 teaspoon cinnamon liquid stevia (optional)
  • 4 cups apples (Gala or Fuji)
  • 1/2 teaspoon apple pie extract (optional if using zucchini)


Instructions

  • Preheat your oven to 350°F and grease a 9 × 13-inch baking dish.
  • Whisk together the coconut flour, sunflower seed meal, sweetener, baking powder, cinnamon, and salt in a mixing bowl.
  • In another bowl, whisk the eggs, melted butter, and Greek yogurt until smooth. Add the stevia if using.
  • Fold the dry ingredients into the wet mixture until just combined. Gently add the sliced apples.
  • Pour the batter into the prepared dish and cover with aluminum foil. Bake for 35 minutes, then remove the foil and continue baking for another 15-20 minutes until golden.
  • Let the cake cool for 10-15 minutes before slicing and serving.

Notes

Store leftovers in an airtight container at room temperature for up to three days.
For longer storage, refrigerate for another week, or freeze for up to three months.
To reheat, warm in a 350°F oven for about 10 minutes.
