Description

Ham Tetrazzini is a delightful casserole featuring tender spaghetti, savory diced ham, and rich creamy sauces topped with melted cheese. This dish is easy to prepare, making it a fantastic option for a quick dinner or comforting meal that will please the entire family.


Ingredients

  • 1 lb. dry thin spaghetti
  • 10 oz. can cream of chicken soup, undiluted
  • 10 oz. can cream of mushroom soup, undiluted
  • 2 cups sour cream
  • ½ cup butter, melted
  • ½ cup low-sodium chicken broth
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp garlic powder
  • ½ cup frozen peas & carrots
  • 1 lb. cooked ham, diced small
  • 2 cups shredded colby jack cheese
  • 2 tbsp grated parmesan cheese
  • fresh chopped parsley, for garnish


Instructions

  1. Preheat the oven to 350°F and coat a 9×13 baking dish with nonstick cooking spray.
  2. Cook the thin spaghetti al dente in a pot of salted boiling water according to package directions, then drain.
  3. In a large bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, melted butter, chicken broth, salt, pepper, and garlic powder until smooth.
  4. Fold in the frozen peas and carrots, diced ham, and drained spaghetti, coating everything evenly.
  5. Pour the mixture into the prepared baking dish and top with shredded Colby jack and Parmesan cheeses.
  6. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is melted and the casserole is heated through.
  7. Take the dish out of the oven and sprinkle with fresh parsley.
  8. Let it stand for 5-10 minutes before serving.

Notes

Feel free to use leftover ham for an extra budget-friendly meal.
For a lighter version, you can substitute low-fat sour cream and cheese.
Adding vegetables like bell peppers or mushrooms can enhance flavor and nutrition.
