Description
This Healthy Chicken Tortilla Soup is packed with flavor and great for a quick dinner. With fresh vegetables, shredded chicken, and spices, it’s a go-to meal for comfort and health.
Ingredients

- 2 teaspoons olive oil or a generous amount of cooking spray
- 1 cup chopped onion, about 1 small onion
- 2 cups diced celery, about 4 medium stalks
- 4 minced garlic cloves, about 2 teaspoons minced garlic
- 4 medium chopped tomatoes, or 2 cans diced tomatoes
- 2 cups water
- 4 cups low-sodium chicken broth
- 3 cups chopped or shredded rotisserie chicken
- 2 cups thinly sliced carrots, about 3 medium peeled
- 1 teaspoon dried oregano leaves
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper, add less or omit, if desired
- 1/2 teaspoon sea salt, plus more to taste
- 1/2 teaspoon ground black pepper, plus more to taste
- optional garnish: chopped avocado, chopped fresh cilantro, crumbled cotija cheese, greek yogurt, crumbled tortilla chips
Instructions
- Heat olive oil in a large pot over medium-high heat. Add the chopped onion and diced celery, cooking and stirring for about 5 minutes until softened.
- Stir in the minced garlic; cook for another minute. Then, add the chopped tomatoes and continue cooking, stirring frequently, until they are soft, about 5 minutes. Set the mixture aside.
- Place the onion and tomato mixture along with 2 cups of water into a high-speed blender and blend until smooth.
- Return the blended mixture to the pot. Add the chicken broth, shredded chicken, sliced carrots, oregano, chili powder, garlic powder, cumin, cayenne pepper, sea salt, and black pepper. Bring it to a boil and then reduce the heat to medium-low, cooking for 10 to 30 minutes until the carrots are tender.
- Serve each bowl with toppings such as lime juice, avocado, cilantro, cheese, Greek yogurt, and/or tortilla chips.
Notes
Adjust the spiciness by modifying or omitting cayenne pepper.
For a vegetarian version, omit the chicken and substitute with additional beans or vegetables.
This soup can be made ahead and frozen for a convenient meal option.
