Ingredients
- Super fine almond flour
- Confectioners' sugar
- Dutch processed cocoa powder
- Egg whites
- Super fine white sugar
- Brown gel food coloring
- Unsalted butter
- Marshmallow fluff
- Hot chocolate powder
- Vanilla
- Semi-sweet chocolate (for decoration)
- Dehydrated mini marshmallows (for decoration)
Instructions
- Preheat oven to 300°F and line baking sheets with silicone mats.
- Sift together almond flour, confectioners’ sugar, and cocoa powder.
- Whisk egg whites and sugar in a mixer until stiff peaks form.
- Fold dry ingredients into the meringue gently until combined.
- Pipe macarons onto prepared baking sheets in 1 to 1.5-inch circles.
- Let piped macarons rest until a thin skin forms, about 8 minutes to 1 hour.
- Bake macarons for 15-20 minutes until firm.
- Cool on mats, then remove gently.
- Assemble with a filling of butter, marshmallow fluff, cocoa powder, and vanilla.
- Decorate with melted chocolate and mini marshmallows.
Notes
Make sure to use finely ground almond flour for the best texture.
Room temperature egg whites whip better than cold ones.
Piped macarons should rest before baking to develop a skin.
