This Hummingbird Cake brings together the delightful flavors of banana, pineapple, and toasted pecans in a moist cake topped with creamy frosting. Perfect for gatherings and celebrations, it’s easy to make and offers a taste of the tropics.

- 3 cups all-purpose flour, spooned into measuring cup and leveled-off
- 2 cups granulated sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 3 large eggs, lightly beaten
- 1½ cups vegetable oil
- 1½ teaspoons vanilla extract
- 1 (8-oz) can crushed pineapple in juice, undrained
- 2 cups coarsely chopped bananas (about 4 medium bananas)
- 1 cup chopped pecans, toasted
- 2 (8-oz) packages cream cheese, softened
- 1 cup (2 sticks) unsalted butter, softened
- 2 teaspoons vanilla extract

- 1½ cups chopped pecans, toasted
Instructions
- Preheat the oven to 350°F and set an oven rack in the middle position. Spray three 9-inch round cake pans with nonstick cooking spray with flour.
- In a large bowl, whisk the flour, sugar, salt, baking soda, and cinnamon. Add the eggs and oil, stirring until the dry ingredients are moistened. Stir in vanilla, pineapple, bananas, and pecans.
- Pour the batter evenly into the prepared pans. Bake for 25 to 30 minutes, until a cake tester inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely, about 1 hour.
- For the frosting, combine cream cheese, butter, vanilla, and salt in a mixer bowl. Mix on low speed until combined, then increase to medium-high and beat until light and fluffy, about 2 minutes. Gradually add confectioners’ sugar, mixing on low until combined, then beat until fluffy, about 1 minute.
- To assemble, place one cake layer on a platter and spread with about 1 cup of frosting. Repeat with the second layer and cover the top and sides of the cake with the remaining frosting. Press chopped pecans onto the sides of the cake, refrigerate until serving, and let sit at room temperature for an hour before enjoying.
Notes
Toast the pecans before adding them to enhance their flavor.
For smoother frosting, make sure the butter and cream cheese are at room temperature before mixing.
